Certain foods, like fresh vegetables are sometimes a luxury item because instead of spending $3 on bell peppers, we could buy 3 boxes of mac ‘n cheese. But one afternoon, I was dyin’ for a salad. This is how this salad was born, like many delicious recipes: scraps of a little bit of this, a little bit of that.
1 can of tuna
1/2 of a bell pepper, sliced thin
1 clove of garlic, finely minced
1 tbsp of finely minced red onion
2 stalks of celery, diced
1/2 of an avocado, diced
the juice from 1/2 of a lemon
2 tsp red wine vinegar (or apple cider vinegar)
1 tbsp olive oil
cilantro, finely minced
Assemble. It’s just a salad. Throw everything into a big bowl and toss gently.
